Course Outline

Preserving food and making it taste good, or even better is an art that humans unlocked a long time ago. Using Salt, vinegar, yeast and smoke we will create some long lasting and tasty foods that you can store or eat at your leisure. Meats and fish that can last years and all without the modern chemicals and preservatives our foods now contain. This is real food to last the winter with nothing else other than a cellar, cold room (without power)

Food Preservation and Enjoying Wild and Home Grown Foods

Here you will learn all about preserving food, the fruits of our labor, around a campfire and an outdoor kitchen. Enjoying the food too! Today food preservation is almost an afterthought with supermarket shelves filled with food from all over the world. Recently we have all had a realization that this trade and delivery network can be interrupted and halted. With this we were put in a precarious position with hoarding, panic and bulk buying taking over. Food security is and soon will be a growing concern for many people in our modern world.

We will go over some of the ways foods are preserved without the use of chemicals. Even better, we will be adding flavor, texture and longevity in the process. Food preservation was a necessity to stockpile and make foods last through the winter when fresh foods are harder or impossible to come by. We are harking back to those times and showing you what we can do with some great tasting recipes. A head chef and local business owner Jeremy will be sharing some of his experience and recipes. 

How it will work

We have an outdoor kitchen with a roof for us to prepare all the recipes and everything will be prepared outside. With a relaxed atmosphere we will prepare fish and hams for smoking. We will make jerky on the fire and in a dehydrator. We will pickle vegetables, make a chutney for your cheese and all will be canned for long term storage. The chutney is at its best after 6 months!! We will sample and make sourdough bread and hardtack by the fire. Last but not least in the evenings we can try samples of our brewing and winemaking.

You will be hands on making the recipes dehydrating and preparing all the foods. Pre made samples of everything that you are making will be available for you to try so you know what to expect when you open the can in 6 months. With most of the recipes we will be preparing the flavors get better with time.

It will be a foodie and relaxed social learning experience outside. We will be smoking over a fire and in a smoker. Feel free to bring your own produce for canning or making jerky and even bring one portion of your favorite meal so we can make you a home made backpacking meal!
